This peanut butter and jelly chia parfait is made with a creamy vanilla almond milk chia pudding base. They then get topped with a quick & easy chia berry jam, and finally finished off with some delicious smooth peanut butter. Enjoy this parfait for breakfast, a healthy snack, or dessert!
So this recipe for peanut butter and jelly chia parfait is actually a new & improved version of an older recipe on the blog.
Peanut butter and jelly is one of my all-time favourite combinations, so this recipe is one of my favourite ways to enjoy chia pudding!
The base starts with a creamy vanilla chia pudding, and then is layered with some berry chia pudding jam and finally topped off with some peanut butter. If I’m feeling extra fancy sometimes I’ll even top the whole parfait with some granola. (which is delicious too!)
One thing I love about this recipe is that for the jam you can use any kind of berry mixture you like. I used raspberries with some strawberries for this one. If you’re feeling creative you can always mix up the fruit in the jam. Strawberry & rhubarb jam would be delicious, or even cherry jam!
I wanted to revamp this recipe in honour of National peanut butter and jelly day which is April 2nd! (Who knew, right?) So do yourself a favour and make this recipe to celebrate! (or if you’re looking for more great pb&j recipes make sure to try this peanut butter and jelly smoothie!)

Description
A layered chia pudding topped with a berry chia jam and peanut butter
Ingredients
Scale
Chia pudding:
- 1/4 cup chia seeds
- 1 cup almond milk
- 1/2 tsp vanilla extract
- 2 tsp maple syrup
Berry Jam:
- 1 1/2 cups mixed raspberries & strawberries
- 1 tbsp maple syrup
- 2 tspchia seeds
Peanut butter layer:
- 1/4 cup peanut butter, melted
Instructions
- To prepare the chia pudding, add all pudding ingredients into a bowl and whisk together. Place in the fridge and let sit for a couple hours or overnight until the texture is a thick pudding. If it is too thick for your liking, just add some more almond milk.
- In a saucepan, add your berries on medium heat, stirring constantly for 5-10 minutes, until berries are cooked down. Add in the maple syrup and chia seeds and stir together. Turn off the heat and let sit for .5 miToes
- Too assemble your parfait, start with a layer of chia pudding, next add the berry jam layers and melted peanut butter.
- Place in the fridge for 10 minutes to set and enjoy.

Hey, I know this was posted years ago, but I just found it bc I’m trying to recreate something I get from Nekter, I can’t afford to keep going there, haha. It looks delicious. My question is, I hate almonds and have never liked the taste of almond milk.. Would oat milk work or does it have to be almond milk? Thanks so much!

My sister loves this parfait recipe! I made her a bunch right after she had her first baby so she could grab one whenever she needed a quick snack. I just recently started making them again but for some reason the chia pudding just isn’t becoming thick like pudding after I place it in the refrigerator. It’s watery and I can’t figure out what I’m doing wrong.
I would love to hear your suggestions on why that could be…

Hi Danni, if you use the ratio of about 1/4 cup of chia seeds to 1 cup of liquid and mix them together, it should turn into a pudding. double check to make sure your measurements are correct. I in fact find that i often need 1 1/4 cup of liquid even for 1/4 cup of chia seeds.

First of all who says no that recipe!! I love your combine and whenever i visit your blog i can’t return and spending my whole time here :)) i have a question. Agave, maple syrups are so expencive here in Turkey.. What can i prefer to use healthy sweetener instead of these syrups for your all recipes?? Is honey work with same measurement ?-

Hi Melike, thank you so much! You can use honey or any other type of “sticky” sweetener. If you prefer using sugar to sweeten you can also use that too!

Peanut butter and jelly never fails to dazzle me. Your chia parfait looks beautiful and SO delicious and sweet. I love how the layers just stack so perfectly! Whenever I try to make layered-treats like this, they always end up mixing together and making a big messy and ugly-looking mixture of foods! LOL! At least taste isn’t sacrificed!

Hi Cassie, thank you! Peanut butter and Jelly is the best, isn’t it? When making layers I like to gently spoon them into a cup. I also make sure that the bottom layer is thicker than the top layers so it doesn’t mix all together!
